The place
Charcuterie Suc is a family business tucked away in the heart of the Tarn. Three generations of know-how stand behind the products. The pork comes exclusively through short supply chains, picked out directly at the breeder's. The house respects the product and the old methods: open-air drying, cooking in copper cauldrons, natural salt-curing.
The range is wide and consistently good. Fresh sausages, dried saucisses and saucissons, pâtés, jambonneaux, fritons, pig's tongue, black pudding... and plenty more besides.
On market days, look for the long queue of regulars waiting their turn. You can also contact the producer to have orders vacuum-packed for easier transport and keeping.
There's a farm shop on site at the production premises.
