The place
Damien Merit makes serious miels (honeys) near Castres, in the Tarn. He carries on a method born from his father Alain's work with Michel Gonnet, a honey specialist at the French national agronomy institute INRA.
What comes out of the hives is raw honey. The beekeeper never heats it, which means it crystallises naturally and is jarred straight after harvest. That way the flavour and the medicinal properties stay intact.
The site lists a full range of single-flower and territory-specific honeys, each one different from the next.
Merit also offers discovery boxes, a tidy gift or a small luxury to keep for yourself.
