Pasteurised juice or raw?

Raw juices keep refrigerated for only a few days but hold on to more vitamins; they are rarer in shops. Pasteurised juices travel well and are the norm.

Is syrup just liquid sugar?

Not necessarily. A good craft syrup has a high concentration of fruit and a measured amount of sugar. Dilute in still or sparkling water, or use in baking.

Which juices in winter?

Apple, pear, quince, citrus, hot juices (non-alcoholic mulled drinks). In cooking, acidic fruit juices can stand in for vinegar in some dressings.
