The place
Just outside Carcassonne, <a href="https://www.domaine-calmel-joseph.com" target="_blank" rel="noopener">Domaine Calmel & Joseph</a> makes <a href="https://www.calmel-joseph.com/nos-vins/" target="_blank" rel="noopener">Corbières wines</a>. The estate covers 200 hectares between 240 and 300 metres, on the foothills of the Val de Dagne, the Alaric and the Hautes Corbières. The domaine also produces honey and olive oil. Farming follows organic principles, and the wines carry <a href="https://epicurieux.org/features/bio/" target="_blank" rel="noopener">organic certification</a>. The landscape, shaped over centuries by human hands, is set out for visitors to settle in and taste at their own pace.
The domaine also runs <a href="https://www.domaine-calmel-joseph.com/les-gites/" target="_blank" rel="noopener">gîtes</a>, a useful base for mountain biking, horse riding and other outdoor pursuits.
Calmel & Joseph have a small surprise for us: they introduced us to <a href="https://www.calmel-joseph.com/vin/8797/lepicurius-2019/">L'Epicurius</a>.
