The place
Carole and François are farmer-craftspeople in the north of Côte d'Or, in Bourgogne, and certified organic. They push further than the label, convinced that respect for the living world is needed both to protect a battered planet and to keep food worth eating. Their pasta, Épâté en Bourgogne, is made from durum wheat and eggs. Plain, or in less common flavours: wholegrain mustard, wild garlic, lemon thyme, blackcurrant...
You can find them in food shops, or by mail order through their site (fermedecombenoire.eu, where the order form lives). Outside lockdown periods they also take their fitted-out trailer to food fairs, nature events and other gatherings, public or private, cooking their fresh organic pasta on the spot with a choice of house-made sauces.
