The place
The name Guy Roux may ring a bell for French football fans over forty, but our Guy Roux has only one thing in common with the manager: both are French champions, in very different fields. This one is a master chocolatier, with a particular speciality: sugar-free chocolate. We first met him at a trade fair in the Auvergne-Rhône-Alpes, where we found not only the quality of his work but also a useful proximity: he lives in the Tarn.
We then drove out to his workshop in Mazamet, at the foot of the Montagne Noire. After an afternoon there, you come away knowing more about cacao than you imagined possible, and having tasted the full range of products: bonbons, bars, soft chocolate spreads, sugar-free jams. Guy Roux, master chocolatier, leaves you with no shortage of choice.
He also runs workshops in his lab. Visitors can make their own bonbons and chocolate mouldings, with Guy passing on his techniques and the practical know-how that comes from years of working cocoa.
The pleasure of chocolate without the sugar, open to anyone who wants in. The kind of meeting any épicurieux visitor is glad to make.
