The place
The Allary family has been farming oysters at Leucate for over thirty years. They sell 95% of their production direct from the shop on the right bank of the oyster-farming hub. So regulars can pick up very fresh produce any day of the week.
For the past fifteen years a growing share of their oysters has been rope-grown. The technique is what keeps the quality consistent for their fussiest customers. They use the same method for mussels, what local ostréiculteurs call spéciale collée.
