Technically year-round, but the old "R-in-the-month" rule is still a fair guide: from September to April, oysters are firmer and brinier. In summer, some spawn (milky oysters), which is a matter of taste.
In France, the numbers run from no.0 (over 150 g) to no.5 (under 30 g). Nos. 2 and 3 are the most common. The smaller the number, the larger the oyster.
The first farms oysters, the second mussels. Many do both, and produce clams, cockles or bouchot mussels depending on the area.
