What makes a good gin?
The quality of the juniper, balance among the botanicals, purity of the base spirit, and the distillation method (vapour infusion versus maceration). A good gin drinks neat or barely diluted.
Which tonic for which gin?
A floral gin calls for a light tonic (Fever-Tree Indian, Fentimans Light). A dry, strong gin stands up to a more bitter tonic. Avoid overly sweet tonics, which flatten the gin.
Why so much French gin now?
Distilling from neutral spirit is straightforward, the botanicals can be 100% local, and creativity is unrestricted: no binding AOC rules. Fertile ground for new distillers.
